Valentine’s Day Steak
This Valentine’s Day, instead of going out, stay in and cook your loved one the ultimate steak dinner.
This Valentine’s Week (10th–17th of February), our award-winning Farm Shop near Scorrier is offering heart shaped sirloin steaks (one heart feeds two) and a bottle of Jack Rabbit wine for just £15.00!
Sirloin is a well-flavoured steak that needs to be cooked carefully for it to be enjoyed at its best. Cut from the large back muscle of the animal it has a beefier taste than fillet, meaning it is more suitable for high flavoured sauces including those with onion or chilli.
Here are a few of our top tips for getting the best from your steak:
- Before you start, remove your steak from the fridge and allow it to come to room temperature about an hour before cooking. If cooked cold, the heat from the pan won’t penetrate the middle and won’t cook evenly.
- Heat your pan, or griddle until it is super hot, before you begin as this will help to caramelise the meat, essential for delicious steak.
- Aim to cook your steak medium-rare to medium, any more than this and it can end up chewy and tough. Turning it every minute or so, will help to get an even cook.
- It is important to let the meat rest for about 5 minuets before eating; this allows the meat to relax and the juices to re-distribute.
Sauces to try:
Peppercorn sauce: simple to make with only a few ingredients including, peppercorns, finely chopped shallots, stock, double cream and red wine – this sauce is packed full of flavour. Serve with mash potato for mopping up.
Béarnaise Sauce: a little trickier to make than the peppercorn sauce, a Béarnaise sauce will add buttery goodness to your romantic meal. It uses classic techniques including clarifying butter, but we assure you, it is worth it!
Mushroom Sauce: a deliciously thick mushroom sauce with thyme, garlic and lemon make steak even more indulgent.
Sauce Diane: This is the sauce to use for an injection of heat to your dish. Made using Worcestershire sauce and Dijon mustard (and a hearty splash of brandy) and double cream it’s an opulent choice this Valentine’s Day.
Jack Rabbit Wine
- Jack Rabbit’s Pinot Grigio is dry and crisp with flavours of fresh apple and citrus – it has a soft, smooth finish.
- Jack Rabbit Merlot is a mellow smooth wine, full of berry and plum flavours.
- Intense and lively the Jack Rabbit Shiraz is rich and spicy with flavours of blackberries, raspberries mixed with sweet vanilla.
